Born in Cyprus but brought up in the UK, Sophie Costa had a distant relationship with her mother country – except when it came to food. A firm believer in holding on to culinary traditions and passing them down the generations, she has spent the past few years gathering and perfecting recipes for such Cypriot delicacies as bourekia and galaktoboureko. Gathering tips from the elder women in her own family, and from cousins and their friends who still live in the villages of home. She makes everything by hand, using organic ingredients wherever possible; if a recipe calls for curd cheese or halloumi, she makes that herself, too. Whether you’re also Greek or Cypriot by birth, or have fond memories of visits to the eastern Mediterranean, Boureki is the place to savour its distinctive cuisine. So, kopiaste – come and eat – and kale orexi: good appetite!

Hook and Sons

Grab something super fresh this Sunday with Hook and Sons.  Their milk is bottled Sunday morning and bought straight to market for you to buy and enjoy throughout the week.  If you haven’t already tried raw milk this weekend is the perfect time to sample it.   Here’s what Hook and Sons have to say about their own products:-

Raw Milk: Our raw milk is a very different product to the pasteurised, homogenised milk you can buy in a supermarket. It will be very fresh, as nature intended and direct from the farm. Its taste will be pure. The milk will be bottled as fresh as possible. To really enjoy your milk, follow these tips: Put the bottle of milk immediately into a fridge, and keep below 4C. Remember raw milk has not been pasteurised and should be kept cold. If you have more milk than you will use in the first three or four days of receiving your milk, we suggest that you freeze the surplus milk so that you have fresh milk later on in the week. Freezing does not affect the milk quality, but do allow room for it to expand.  Raw milk is not homogenised. Therefore, if left overnight in the fridge, the cream will rise to the top. In the morning, you will notice a cream line, the creamy top part of the bottle is fantastic with cereals in the morning, and aromatic coffee.

Raw Butter: We produce our lovely Unsalted or Lightly Salted Raw Butter using a Welsh sea salt, certified as organic by the Soil Association. The ‘Halen Môn Anglesey Sea Salt’ that we use in the production of our lightly salted raw butter has been awarded ‘PDO (Protected Designation of Origin)’  protected food name status by the European Union. The Anglesey Sea Salt Company have been hand-harvesting the famous sea salt from the Menai Strait for 17 years. Each pack of our raw butter is handmade, churning just the cream taken from over 18 pints of organic, raw, whole milk.  From this butter we also produce our own Ghee.

Raw Cream: Produced from our raw organic milk, available in 142ml and 284ml pots, thick enough to ‘stand a spoon in’ this luscious cream is heavenly.

You can now be part of Hook and Sons by becoming a shareholder!  This is a fantastic opportunity and you’ll also be helping to buy another farm so that Hook and Sons can continue producing their amazing produce:-

At Hook & Sons we value our relationship between the environment, health, and the food we eat. We farm organically, avoiding the use of pesticides and chemicals as well as maintaining the highest standards of animal welfare.  This means we achieve a harmonious balance between food production and nature. We need to reach a target of £300,000 in order to be able to purchase a second grass farm and expand our existing range by developing new products; including the ‘Holy Grail’ our own Raw Greek Style Yoghurt. We think this is a great proposal for people to invest in our business, whether you are a milk customer or not.  This is your chance to ensure that we continue to supply raw milk products with the added opportunity to grow our business.  Click HERE to find out more.
