Banana and Honey Oat Muffins

Soft, moist and crumbly, nothing beats relaxing with a muffin and a nice cup of tea or coffee. That why we’ve baked some up especially for Mother’s Day. Perfect to treat the Mums in your life to a little wind down this Sunday. So if you’re panicking about what to get these will be a quick, easy and very tasty surprise for them.
We’ve packed ours with some lovely ripe bananas, delicious Greek Fir Tree Honey and a sprinkle of hemp seeds to add a nice nutty flavour, all from The Sidings.

Ingredients
- 225g plain flour
- 30g dehulled hemp seeds (if you don't have these substitute for more oats)
- 60g rolled oats
- 50g caster sugar
- 2 ½ tsp baking powder
- 2 tbsp greek fir tree honey
- 1 medium egg
- 180ml milk
- 2 large bananas
- 75ml light oil (vegetable or coconut)
- ½ tsp vanilla extract
- 1 tsp ground cinnamon
- ¼ tsp salt
Instructions
- Preheat your oven to 190°C. In a medium size bowl mix all of the dry ingredients together, stir well to combine them.
- In a larger bowl lightly whisk the egg and pour in the honey, milk, oil and vanilla.
- Next mash your bananas with the back of a fork and add to the wet ingredients, mix together thoroughly.
- Now add the dry ingredients into the large bowl. Mix all the ingredients together gently, but don’t over mix or beat, the mixture should be a rough batter.
- Divide the mixture into 12 lined muffin or large cupcake cases, at this point you can top with a small sprinkle of oats or dried banana chips if you like them. Place in the preheated oven and cook for around 20 minutes checking the colour every so often until they are nicely golden on top.
- When cooked remove the muffins and place on a wire rack to cool. These muffins are very tasty warm so if you need to check one for flavour we won’t tell anyone.
- When cold, drizzle a very small amount of honey on top. Lastly find a nice tin for them and present to your mum with a smile!
