Grilled Tomatoes with Crispy Bacon and Mustard
Is there an aroma that says breakfast more than bacon? We think not. One of our favourite breakfast treats are grilled tomatoes and crispy bacon on toasted fresh bread, I even add a smattering of whole grain or dijon mustard as it goes nicely with the sweetness of the toms. Simple, delicious! Happy breakfasting.

- Set your grill to medium-high heat around 175C. In an oven proof dish place the tomatoes and drizzle with the olive oil and a pinch of salt. Place them under the grill and cook for 15 minutes until they have split and softened.
- While the tomatoes cook place your bacon in a frying pan with a dash of olive oil and set on a medium-high heat. Make sure the bacon fat is covered in the oil and resting on the pan. use a wooden spoon or spatula to press it down if necessary.
- When the bacon is almost crispy toast your bread and spread with a thin layer of the mustard.
- Serve with the bacon on top and then the tomatoes. If there is any oil or juice in the tomato dish pour this over the top for extra flavour. Enjoy!
