Marinated Persian Ginger and Dates on Sourdough

One of the things we love about getting our food from the Sidings is that there's always something new and interesting to try. We wandered past the Celtic Bakers who were selling an array of sourdoughs and Chez Francis & Sylvie La Fromagerie who had the most wonderful selection soft cream cheese. We took some of both away with us and paired it up with some marinated ginger and dried dates for a nice quick lunch.

Ingredients
- 200g Persian marinated ginger
- 100g Dried dates
- 200g Soft cream cheese
- 1/2 Loaf sourdough
- Handful of fresh parsley
Instructions
- Set a griddle pan on to a medium-high heat. Slice the sourdough and place into the pan. Leave to toast on each side for about five minutes, checking every few minutes to see if it is done. When it's ready you should see clear griddle lines on each side.
- Cut the dates into quarters, removing the stones if necessary.
- Cut the sourdough slices in two. Spread generously with the soft cheese. On top place the dates and marinated ginger evenly. Scatter with parsley and serve.
